Breakfast (or dinner) Casserole
INGREDIENTS:
10oz bag frozen hash brown potatoes, thawed
1 c cooked ham, cut into 1/2" cubes (I buy pre-cooked & cut)
1/4 c green onions, thinly sliced
6 eggs
1 c milk
4.5 oz can of green chilis (something I added for extra flavor)
1/2 tsp dry mustard
1/4 tsp salt
1/4 tsp pepper
1 1/4 c shredded cheese (I use a finely shredded Mexican blend)
INSTRUCTIONS:
Prehead oven to 350 degrees. Spray a 9" square baking dish with nonstick spray (I used a 9 x 13 because that's all I have). Line bottom of baking dish with potatoes; sprinkles with ham, then onions. In medium bowl, whisk together eggs, milk, dry mustard, green chilis, salt & pepper. Pour egg mixture over ham/onions. Sprinkles with cheese. Bake 45-50 minutes or until firm.
